This vegan chocolate pudding cake is made with a few ingredients that you probably already have in your house. It's so quick that it can be made on a weeknight but it's also impressive enough that it can be served at a dinner party.
This was really simple to make and turned out so divine. You start by making the cake with the flour, sugar, cocoa powder, baking powder, almond milk, vegetable or coconut oil and vanilla. Pour it in an 8x8 baking dish. Next, you make a topping which is the sauce after it comes out of the oven. The topping is made with brown sugar, cocoa powder and vegan chocolate chips. This gets sprinkled over the top of the cake batter, do not stir, and then pour hot water on top, again do not stir, and put it in the oven.
Once it comes out of the oven, let it cool for at least ten minutes to set up. Serve with vegan vanilla ice cream or whipped cream. This dessert is incredibly rich so we topped with some fresh berries to lighten it up. It's best the first day but will keep for a couple days in an airtight container.

Ingredients
- ¾ cup All-Purpose Flour
- ½ cup Sugar
- ½ cup Unsweetened Cocoa Powder
- 1 ½ teaspoons Baking Powder
- ⅔ cup Unsweetened Almond Milk
- 2 tablespoons Vegetable Oil or Melted Coconut Oil
- 1 teaspoon Vanilla
Topping
- ⅔ cup Brown Sugar
- ¼ cup Cocoa Powder
- ¼ cup Vegan Miniature Semisweet Chocolate Chips
- 1 ¼ cups Very Hot Water
Instructions
- Preheat oven to 350 degrees.
- Combine flour, white sugar, cocoa powder and baking powder.
- Add almond milk, oil and vanilla. Stir until very well mixed.
- Pour into an 8"x8" baking dish.
- In a small bowl, combine the brown sugar, cocoa powder and vegan chocolate chips. Sprinkle over the cake batter. Do not stir. Pour hot water over the top.
- Bake for 30-35 minutes or until the top looks cooked. Serve warm with ice cream and fresh berries.

This recipe for the Vegan chocolate pudding cake was, by far, the best recipe I have found to make this. I loved it and so did my family. We enjoyed it so much it was gone by the next day. Oops!!! Looks like I'm going to have to make it again 🙂.
