This recipe was the one, the chosen one, the Harry Potter of chocolate chip cookies if you will. I thought they were the spitting image of their counterpart standard cookie, so I brought my daughter and her friends inside for one. Two minutes and three chocolate-smeared faces later I knew I wasn’t alone, these ultimate vegan chocolate chip cookies were a hit!
So why are these the best vegan chocolate chip cookies I have ever had, you ask? They are the best because the cake flour keeps them light and fluffy while the cornstarch helps them hold their shape. Chilling them in the refrigerator or freezer helps develop more complex flavor and also prevents the cookies from spreading too much during baking. Ultimate Vegan Chocolate Chip Cookies

Ingredients
- ½ cup Cold Vegan Butter (or 1 stick) cut into small cubes I recommend Earth Balance
- ½ cup Brown Sugar
- ¼ cup Sugar
- 1 Flax Egg (2 ½ tablespoons of water mixed with 1 tablespoon of flax seed mill)
- ¾ cup Flour
- ¾ cup Cake Flour
- ¾ teaspoon Cornstarch
- ¼ teaspoon Fine Sea Salt
- 1 ¼ cup Vegan Chocolate Chips
Instructions
- Preheat the oven to 410 degrees. (These cookies are better if chilled before baking, if you are going to chill you can wait to preheat the oven until the cookies are chilling.)
- Combine 2 ½ tablespoons water with 1 tablespoon flax seed mill and set aside.
- In a large mixing bowl, cream together cold cubed butter, brown sugar, and sugar for 4 minutes or until creamy.
- Add flax egg and mix well.
- Stir in flours, cornstarch, baking soda, and salt. Mix until just combined to avoid overmixing. Stir in chocolate chips.
- Separate dough into twelve balls and place on lightly greased cookie sheet.
- Bake in the oven on 410 for 10-12 minutes. Let them rest for 10 minutes to set.

My family LOVED this recipe. I've been looking for the "perfect" vegan chocolate chip cookie. I've tried other recipes, but yours was by far my favorite. Actually our favorite!! My husband & kids wasted no time devouring them. I guess, I am going to have to make more. Oops 🙂.
