You are going to love this creamy vegan cauliflower sauce. I used to live by a Wegmans grocery store. If you have ever been to one you will totally relate when I say they are the best. They're like a Trader Joe's x 1000, they have all kinds of delicious foods that are exclusive to them, including their Cauli 'Creme' sauce. When we moved away from a Wegmans, this was one of the main items I missed. I needed to find a way to make it myself at home. After searching the internet, I found an amazing recipe at Creamy Cauliflower Sauce Recipe - Pinch of Yum and easily veganized it.
To make this recipe, start by taking 5-6 cups chopped cauliflower (it was a head of cauliflower for me) and boiling it in water for 7 minutes or until the cauliflower is tender. Do not drain.
Meanwhile, sauté garlic in two tablespoons vegan butter (I love Earth Balance!). Cook for a few minutes until the garlic is soft.
Next, using a slotted spoon transfer the cauliflower to a blender. Add 1 cup of the cooking water, the sauteed garlic/butter, salt, pepper, and unsweetened almond milk. Blend for several minutes until the sauce is very smooth. If your sauce looks a little chunky or separated, you need to blend it longer. If your sauce looks too thick, you can add a little more of the cooking water. And that's all there is to it!
This creamy dreamy sauce will change the way you look at cauliflower. You can use this for pastas, rice, pizzas, casseroles or my personal favorite, creamed spinach. You can also just eat it like a soup!
Vegan Cauliflower Sauce
Ingredients
- 8 cloves of garlic, minced
- 2 tablespoons vegan butter
- 5-6 cups cauliflower florets
- water
- 1 teaspoon salt
- ½ teaspoon pepper
- ½ cup unsweetened almond milk
Instructions
- Boil the cauliflower in water for 7-10 minutes or until the cauliflower is tender. Do not drain.
- Meanwhile, sauté the garlic in the butter for a few minutes, until the garlic is softened. Do not brown the garlic or it will taste bitter.
- Using a slotted spoon transfer the cauliflower to a high-speed blender or food processor. Add 1 cup of the cooking water, the sauteed garlic/butter, salt, pepper, and unsweetened almond milk. Blend for several minutes until the sauce is very smooth. If your sauce looks a little chunky or separated, you need to blend it longer. If your sauce looks too thick, you can add a little more of the cooking water.
